Crispy Roasted Shiitake Mushrooms

So now that winter is threatening to cease we can begin to re-acclimate ourselves with flavors from the farmers market.
Roasted Shiitake mushrooms is a simple and wonderful recipe I would like to share with you today.
Stem and rinse your Shiitakes
Dry them with a hand towel
In a bowl combine:
1/2 cup of olive oil
1 tablespoon ground cumin
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon white pepper
Toss your Shiitakes in the bowl with your spices and oil and stir them around until you’ve coated them.
Pre-heat oven to 400 degrees. I like to use the convection setting for this but the bake setting is just fine.
Toss the shrooms on a baking sheet and bake on the top rack for 25 minutes checking and turning intermittently.
The beefy flavor will blow you away. Throw them into any recipe for depth of umami
